Curry Coconut Bamboo Chicken soup
I don't know if this dish even has an English name but that's what I'm calling it! It's called "kapoon" in the Hmong/Lao/Thai community.
One of my all-time favorite dishes. The main ingredients consist of shredded chicken, shredded bamboo, curry, & coconut milk. Of course, the noodles. I am very picky about what type of noodles I use for my dish. Even my family is. I use Japanese style noodles.
